5 Healthy Breakfast Ideas On The Go With Toast

Looking for healthy breakfast ideas on the go for busy weekdays? Here are five toasts I’m making on repeat right now using simple ingredients that you definitely have in your cupboards.


These days, I am rushed for breakfast, particularly with a newborn attached at the hip while I’m trying to handle business (literally, I’m still working the day job). For a while, I had accepted my fate that breakfast (and food in general) was not guaranteed. The only problem is I’m hungry.

Usually, the one thing I do manage to grab on the go is toast. But the same old buttered toast had started to bore me and it was doing nothing for my health or hunger levels. Now, I’m no breakfast queen, but for my sanity, I had to do better than this.

So, I started experimenting with putting all sorts of things on my toast and ended up with more than a few easy work breakfast ideas for a busy weekday morning. I have managed to quite easily grab these toasts in one hand, fold them over if need be, and head off to my desk (with the baby on my hip, because apparently he goes wherever I go. We’re a package deal.)

Naturally, I had to share my creations because I’ve taken too many pictures of toast not to. So, here is a short montage of breakfast on toast with my top 5 healthy breakfast ideas on the go. Ta da!

Please note, the toasts are ranked in no particular order and many toasts were hurt in the making of this post.

1. Tahini Flavor Twist with Tomato and Za’atar 

This tahini and tomato toast is perfect if you want a savory breakfast option. Spread a generous layer of tahini on your toast, add slices of juicy tomatoes, and sprinkle with za’atar for a burst of Middle Eastern flavor. (Cue the M&S advert music). If you’re not on the go, adding an egg on top of this one is too delicious.

Tahini is good for stable energy levels, is good for your bones your bones and has a nice dose of healthy fat. Out of all the breakfast ideas on the go this one makes me feel like I’ve got my life together even on a busy Monday morning – za’atar does that to people.

Ingredients:

  • 1 slice sourdough bread or wholemeal bread toasted
  • 1tsp tahini
  • ½ tomato sliced
  • Sprinkle of dried za’atar

2. Almond Butter Toast with Blueberries 

This is my oh-so-artisan twist on peanut butter and jelly. If you want to avoid added sugars but want to enjoy something sweet to start your day, try almond butter and blueberries on toast. The combination of creamy almond butter and fresh blueberries is super delicious and it’s good for you.

This toast is loaded with antioxidants and healthy fats to keep you young. Almond butter health benefits include heart health and stable energy levels, making it perfect for a quick breakfast that keeps you full until lunch. Plus, this is an easy breakfast idea for work that you can make in minutes. You don’t need to spend time slicing up your blueberries like me. Round blueberries stick perfectly well to the almond butter, so they won’t roll away!

Ingredients:

  • 1 slice sourdough bread or wholemeal bread toasted
  • 2 tsp almond butter
  • Approx. 20g blueberries
  • Sprinkle of mixed seeds (optional)

3. Blackberry “Jam” n Toast

This blackberry “jam” toast is made with fresh blackberries mashed onto your toast, offering a tart and sweet flavor without any added sugars. It’s another healthy breakfast idea on the go that is fast, delicious but simple. Plus, blackberries are great for supporting the digestive system and are packed with vitamins (I’m talking the whole alphabet.)

All you need is a fork and the will to mash up a handful of blackberries (which can be quite therapeutic, actually), and there you have it – blackberry jam easy. 

If you’re looking for other breakfast food ideas for work, consider adding a handful of nuts or a sprinkle of chia seeds to this toast for extra protein and crunch that will keep you full.

  • 2tsp peanut butter
  • 5-7 blackberries mashed

4. Hummus on Toast with Cucumber 

If you’re in the mood for something savory for breakfast ideas at work, hummus and cucumber toast needs to be one of your new go-tos. Spread a layer of hummus on your toast and top with crisp cucumber slices. I love this stuff, especially with pepper hummus. The variety of hummus flavors means the options are endless, and it’s a fantastic breakfast on the go option.

  • 5-7 slices of cucumber
  • Sprinkle of black pepper

5. Classic PB and Banana Sandwich

Finally, you can’t go wrong with the classic peanut butter and banana toast. It’s a staple for a reason: creamy peanut butter and sweet banana slices are surprisingly filling and it’s a great healthy option. And no, it’s not just for kids! (Though, you can share if you want.)

PB and banana sandwich calories are approximately 300 per toast and packed with good stuff, including protein to keep you going and fibre to support your digestive system.

Bananas have always been a bit of a breakfast fast food for me. If all else fails, I like to grab one of those with a coffee. However, if you’re looking for breakfast at the office ideas, this toast is a great one to munch at your desk. It’s easy to pack and not messy to eat.

  • 1 small banana sliced
  • 1 tbsp peanut butter

I’ve always found breakfast ideas on the go, particularly ideas for work breakfasts can be tricky because they often mean you need to revert to packaged food. But these toasts are all quick and easy options using simple ingredients. Personally, I still have a breakfast planner on my fridge to take further mystery and thinking out of my morning. One toast for every morning.

Other quick breakfast ideas on the go that go on my meal planner include my quick mango yogurt lassi or my easy overnight oatmeal apple cinnamon breakfast. Both of these can be prepped the night before and literally grabbed as you walk out the door.
